This is the story of Paulo, the Eskimo, who has a particularity: he eats only animal products and is in great shape. Paulo is an Inuit living in Greenland!
This seems to defy the laws of nature. While numerous studies show that vegetable fats are better for your health than animal fats, Paulo, who eats only animal products, is in great shape!
Cardiovascular problems are a thing of the past. It's not that Paulo doesn't want to eat fruit and vegetables or olive oil, but he'll never see olive or fruit trees on the ice cap.
Paulo wondered if the Inuit genes were protecting him... Then he called a friend, Dyerberg, a Danish researcher, to help him understand.
They decided to carry out a study to compare the rates of cardiovascular disease in the Inuit of Greenland with those of their cousins who had moved away and were now living in Copenhagen or somewhere in Denmark.
The study draws clear conclusions: the health status of Inuit living in Denmark is not the same as that of Inuit living in Greenland, because they have the same heart problems as other Danes. So it's not their Inuit origin that protects them, but the Inuit diet.
What can we learn from this history?
Over the centuries, the Inuit (like other civilizations such as the Cretans) have developed food traditions in harmony with their environment and their health.
They have learned to use the specific resources of each territory to meet their own physiological needs.
Resistance to disease therefore lies not in the genes themselves, but in the foods that stimulate the corresponding genes.
